Dairy-free
2 large ripe Coeur de Boeuf tomatoes or 3 smaller ones
3 garlic cloves
2 shallots
350g good quality beef mince
1 tbsp Worcestershire sauce
a good splash of Tabasco - to taste
3 tbsp vodka
1 tbsp extra virgin olive oil
sea salt & black pepper
300g pasta
chopped fresh parsley



BLOODY MARY BOLOGNESE


All the flavours of the well-known cocktail in a delicious pasta dish!
Blanch, skin and deseed the tomatoes. Finely chop the tomatoes, garlic and shallots. Heat 1 tbsp of olive oil in a large pan, and add the chopped garlic and shallots. Once softened, add the beef and cook until brown.
Stir in the chopped tomatoes and add the Worcestershire sauce, a splash of Tabasco and 3 tbsp of vodka. Cook on a high heat for 10mins, then turn down the heat and leave to simmer for 30mins.
Season well with sea salt and black pepper. Serve with pasta, finish with a sprinkle of fresh parsley.
