CRUNCHY SUMMER SALAD

This quick salad is crunchy, fresh and super healthy!

Serves 4 

Vegan, dairy-free

3 Sevance vine tomatoes

2 tbsp semi-dried Kubello tomatoes

200g mixed lettuce leaves 

1 handful of walnuts

1 handful of watercress

Sea salt & black pepper

Extra virgin olive oil

Divide the lettuce between the plates. Quarter the tomatoes and season with sea salt and black pepper. Add to the salad. Sprinkle with walnuts and semi-dried Kubello tomatoes. Finish with a drizzle of extra virgin olive oil and a few watercress leaves.
