HEALTHY VEGGIE SALAD IN A JAR
This quick, easy and super healthy salad makes for a perfect lunch!
Recipe serves 2
6 Sweetest Queen tomatoes
50g kidney beans
1 sweet roma pepper
A handful of cashew nuts
2 tbsp walnut oil
1 tsp oregano
Sprinkle of ground paprika
Sea salt & black pepper
Start by adding the walnut oil. Add pepper, salt, paprika powder and oregano.
Quarter the tomatoes, and add to the herbs & oil. Chopping the tomatoes will make this salad extra juicy.
Grate or finely chop the carrot, and add on top of the tomatoes.
Cube or grate the courgette. The finer you chop, the better the oil is absorbed.
Add the kidney beans.
Finely chop the pepper, and layer on top of the beans.
Finally, add the lettuce all the way to the top of the jar, and finish with a sprinkle of (roasted) cashew nuts.
