MINI TOMATO SALSA CUPS
WITH ROASTED PINE NUTS AND FRESH BASIL
Fresh, quick and healthy! These little tomato salsa cups deliver on flavour every time!
1 Baron red beef tomato
1 BeOrange yellow beef tomato
2 tbsp pine nuts
1 tbsp balsamic vinegar
Toast the pine nuts in a dry pan for a few minutes and set aside.
Dice the tomatoes, drizzle over balsamic vinegar and mix well.
Spoon the tomato salsa into little cups. Sprinkle over the toasted pine nuts, and finish with a few fresh basil leaves.
Tip: if you're avoiding bread, these salsa cups can also be served in small glasses!
