Makes 4 small portions
4 roma tomatoes
4 medium organic eggs
1 tsp butter
3 tbsp milk
sea salt & black pepper
1 small onion
SCRAMBLED EGGS WITH GRILLED TOMATOES
A simple, childhood favourite perfect for a quick yet filling lunch!
Finely chop the onion. Slice the roma tomatoes in wedges. In a griddle pan, grill the tomatoes and onions with a tsp of olive oil.
Crack the eggs, whisk with the milk, sea salt & black pepper. Melt the butter in a pan, and add the eggs. Keep whisking until scrambled.
Enjoy warm with a piece of crusty bread.
