1kg vine or Romared tomatoes
2 vegetable stock cubes
1 tbsp extra virgin olive oil
Sea salt & black pepper
A pinch of cayenne pepper
1tsp dried thyme


SUPER QUICK AND EASY TOMATO SOUP

This delicious tomato soup only uses fresh tomatoes and a handful of store cupboard ingredients, and is super quick and easy to make!
Roughly chop the tomatoes. Heat 1 tbsp of olive oil in a lidded pot. Add the tomatoes and herbs. Cook on a medium heat for 20mins. Transfer to a blender and mix until smooth. Serve hot.
