Vegan, dairy-free

500g Sweetest Queen tomatoes

2 garlic cloves

1 shallot

Sea salt & black pepper

A handful of fresh basil 

Extra virgin olive oil

A pasta dish made with only a handful of ingredients and pure, fresh flavours. 

Add the Sweetest Queen tomatoes to an ovenproof dish, drizzle with olive oil and season well with sea salt and black pepper. Roast in the oven for 20mins at 200C. 

Once cooked, take out of the oven. Keep a handful of burst tomatoes aside. Blend the others until smooth.

Toss the tomato sauce with freshly cooked pasta and finish with the whole burst tomatoes and fresh basil.
