6 San Marzano tomatoes

2 cloves garlic 

1 shalot

1 chilli pepper

1 glass red wine 

1 tbsp of tomato paste

300g minced turkey 

2 tbsp extra virgin olive oil

Sea salt & black pepper

Pinch of cayenne pepper


A healthier, grown-up version of the classic meatballs in tomato sauce. 

Recipe serves 4


Blanch, skin and roughly chop the tomatoes. 

Deseed the chilli pepper, and finely chop along with the garlic cloves and shalot. 

Heat 1 tbsp of extra virgin olive oil in a lidded pan.  Add the chilli, garlic and shalot and cook for a few minutes until softened. 

Add the tomatoes and one glass of red wine. 

Leave to simmer for 15mins with the lid on.  Take the lid off, and allow to simmer for another 15mins or until the sauce has thickened. 

Transfer to a blender and pulse until smooth. Season with sea salt and black pepper. 

Season the minced turkey with cayenne pepper, sea salt & black pepper.  Mix well and roll meatballs.  Heat 1 tbsp of olive or rapeseed oil in a pan, and bake the meatballs.  

Once cooked, add the meatballs to the tomato sauce. 

Enjoy warm with a piece of rustic bread or scoop over freshly cooked pasta.
