TURKEY AND TOMATO LASAGNE

This lasagne is a healthier version of the classic cheesy dish, but still packs all the flavour you want from your comfort food. 

Serves 4

Dairy-free

8 San Marzano tomatoes

1 vine Sweetest Queen

3 cloves garlic

1 red onion

1 carrot

1 red pepper

1 glass red wine

300g ground turkey

Extra virgin olive oil

Sea salt & black pepper

Dried basil, oregano, ground paprika

Chop the San Marzano tomatoes and add to a lidded pan along with the wine and herbs. Bring to a boil, allow to cook for 10mins, then turn down the heat and allow to simmer for another 60mins. 

Meanwhile, finely chop the garlic, onion, carrots and pepper. In a separate pan, brown the ground turkey in a tbsp of olive oil, and add the vegetables. Stir in the cooked down San Marzano tomato sauce and season well with sea salt & black pepper.

Spoon the turkey and vegetables in an ovenproof dish, making sure the bottom of the dish is covered completely. Add a layer of lasagne sheets on top. Alternate layers of meat and pasta until the dish is filled to the top. Decorate with a few halved cherry plum tomatoes.
