SPICY TOMATO, PEPPER & CHORIZO SOUP
Warm yourself up with a big bowl of comforting tomato, pepper and chorizo soup..
1kg Cuisinesse vine tomatoes
1 red onion or 2 shalots
2 red peppers
50g chorizo, mild or spicy, according to taste
1 litre chicken stock
1 tsp of cayenne pepper (or more if you like it extra spicy)
1 tsp of sweet smoked paprika
1 tbsp extra virgin olive oil or rapeseed oil
sea salt & pepper
crispy soup balls
Blanch, skin and roughly chop the tomatoes.
Chop the onion, peppers and chorizo.
Add a tablespoon of oil to a large lidded pot. Add the veg, chorizo and herbs, and cook for a few 15 minutes whilst stirring regularly.
Pour in the chicken stock, and simmer for another 30 minutes.
Transfer to a blender and mix until smooth. Taste and if necessary, add salt & pepper.
Serve warm with loads of crispy balls and fresh basil.
