


FESTIVE CHRISTMAS SOUP WITH FRESH AND SUN- DRIED TOMATOES

Serves 6
Dairy-free, vegan
500g San Marzano tomatoes
500g Romared roma tomatoes
50g sun-dried tomatoes
4 garlic cloves
olive oil
smoked paprika powder
2 vegetable stock cubes or fresh stock
fresh rosemary
pasta shapes for soup (we used stelline)
Finely chop the fresh tomatoes, sun-dried tomatoes and garlic. Heat 1 tbsp of oil in a large lidded pot and add the chopped vegetables, 1 tsp smoked paprika powder, fresh rosemary and 2 stock cubes with 400ml of recently boiled water (or replace with fresh stock). Cook for 25mins.
Remove the rosemary. Mix the soup in a blender until smooth.
Place back on the heat and add the pasta shapes. Don't forget to stir regularly!
Finish with a sprinkle of sea salt and freshly cracked black pepper. Serve warm.
